它就是糖鸡
糖鸡是阳江当地传统的中秋赏月吉祥物
也是无数“老阳江”儿时的回忆

阳江有位糕饼师傅创作出糖鸡
因其造型独特
成为当时中秋节的“爆款”！
Tradition has it that the sugar rooster
was created by a pastry chef in Yangjiang
during the Qing Dynasty.
It became a “best seller”
during the Mid-Autumn Festival
for its unique shape.
别看它用料简单
只有白糖和食用色素
整个制作过程
全靠老师傅一双巧手掌握火候
把控制质量
Although it is made of simple ingredients
—only white sugar and food coloring,
the entire production process relies
on the skillful hands of the master chef
to control the heat and quality.
而这门制作技艺
也入选了
阳江市非物质文化遗产代表性项目
This technique has been selected
as a representative project of the
intangible cultural heritage in Yangjiang.
制作流程 将白糖和水倒进锅中，开大火熬煮。 沸腾的糖水渐渐变成糖胶，随后离开炉灶，一边加少量清水一边用木棍不停地搅拌、翻打，待糖胶从透明变成奶白色，有些起砂即可。 往打好的糖胶倒入些许食用色素，边煮边搅拌。 倒进印有糖鸡造型的模具中。 待糖鸡成型，即可脱模。 “糖鸡做得好不好，关键在打糖胶这一环节。”糖鸡制作技艺第四代传承人李万民介绍，师傅不仅要控制搅拌的速度和力度，还要凭经验判断糖胶的粘稠度，如果这一步没做好，糖鸡就难成型脱模。

有“十月糖鸡甜到尾”之说
